Whenever we make steak at home, we just use that extra juice in the pan after the steak is cooked the way I like it. There's so much flavor in that juice that, IMO, that's all the sauce you ever really need...even on a cheap steak.

and a good chef can cook a steak in a pan and still have it comeout alright...
