And I think I'm going to drop it and mining for lw/skinning..

Can anyone think of a good reason to stick with engineering?
 
One suggestion: consider going mining+LW.

In the time it would take you to skill up skinning you could mine enough metal to most likely pay for all the leather you would buy to skill up LW.

Also in the outlands the rate of getting Knothide leather (not scraps) is on the low side. You may want to consider just continuing to mine, and then buy scraps/leather off the AH with the money you make.

If there is some specific type of scale/hide/leather you want to farm for, there are enough skinners in the guild (my druid for example: Darthmauled) who I am sure you could convince to help you farm for the scales/hide/leather you need.

Just a thought.
