Does that mean we get to eat more cookies if we go Dark

Many items will have light or dark level restrictions. However, the two sides will obviously be functionally balanced, it will mostly be aesthetic differences.

I'd put money on light-side items being cheaper for Imperials and and dark-side items being cheaper for the Republic.

From what I've seen looking through the gear database, the costs and stats are the same, they just look different.

So mostly, your choice to go Light or Dark is about how your characters storyline will progress.
